4 large tomatoes-chopped (better to take seeds out so it isnt soupy)
2 avocados-chopped
1/2 c. (small bunch) chopped cilantro
1 can Shoepeg corn
1 can black eyed peas
4-6 (med bunch) chopped green onions
Dressing:
1/4 c red wine vinegar
1/4 c olive oil
1/8 tsp pepper
1 tsp minced garlic
1 tsp cumin
1/2-1 tsp salt (less if chips salty)
Serve with Lime flavored chips. Enjoy!
