Pantry Chowder

Combine in crockpot or soup pot:
one can creamed corn
one can whole corn, undrained
one can diced tomatoes, undrained
one can black beans, drained and rinsed
one and a half cups chicken stock

Chop, saute, and add to soup pot:
one medium onion
one clove garlic

Add salt, pepper and additional desired seasonings to taste.

Bring just to a boil, then simmer awhile.

Options:
You can omit any of the ingredients that you don't like.

You can add different canned vegetables that you do like.

You can even cook and add fresh veggies.


This recipe came to me from a neighbor (thanks, Dawn!) several years ago and it's one of our favorite go-to recipes when we're short on time.
